Oven Roasted Sweet Potatoes
- 7 cups (1-inch) cubed peeled sweet potatoes (about 2 pounds)
- 1 tablespoon olive oil
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups coarsely chopped onion
- 1 tablespoon butter, melted
How to Make It
Preheat oven to 325°.
Place sweet potatoes in a shallow roasting pan. Drizzle with oil, toss to coat. Sprinkle with salt and pepper; toss again. Bake at 325° for 30 minutes. Add onion; stir well. Bake an additional 30 minutes; remove from oven.
Drizzle sweet potato mixture with butter; stir to coat. Broil 10 minutes or until browned.
